Along with my students at New Mexico State University, we are screening chile peppers for high Lutein content. Lutein is a compound made by fruits and vegetables, that is an antioxidant. We work with the Chile Pepper Institute, and look at many different kinds of chiles, like this one, that do well in desert environments. That could be used, maybe even by dietary supplement companies, to produce supplements that can protect our eyes. And also protect our nervous system from diseases like Alzheimers.
